Lime Marshmallow Pops

Here is another quick and easy lime recipe that would be great for St Patrick’s Day.  I love these little marshmallow pops, but I have to admit that I ate most of the marshmallows before I ever got around to making them.

Lime Marshmallow Pops

Ingredients:
Key Lime marshmallows
Vanilla candy coating (I used Almond Bark)
Lime Jello mix (add desired amount to taste or leave it out)
Colored sugar
Lollipop sticks

*I used 12 ounces of candy coating and 3 tablespoons of lime Jello.

Put a lollipop stick into each marshmallow. In a small glass dish, melt candy coating in microwave until completely melted. Add lime Jello powder and stir until all of the Jello is dissolved. Pick up the pop by the stick and dip the marshmallow into the candy coating and cover evenly.  Sprinkle with colored sugar and place on wax paper to cool . Store the marshmallow pops in a sealed container.

Kiss Me I’m Irish – Recycled Valentine Candy Box

Recycle that valentine candy box into a cute gift box for St. Patrick’s Day. Filled with Hershey Kisses, who wouldn't enjoy receiving this!

Spray paint any heart shaped candy box green.  Let it dry completely.

Turn the lid upside down and trace it onto the back of a piece of patterned scrapbooking paper. Cut it out and glue to top of lid.

Use glue to attach the ribbon to the top of the box.

Attach the ends of the ribbon to the inside of the box.

You can use this pattern or make you own

Trace the shamrock pattern to the back of green pattered paper and cut it out.  Make three. Glue to box. Print off and add the” Kiss Me” label to box.

Fill with Hershey Kisses.

Key Lime White Chocolate Cookies

A delicious cookie for St Patrick's Day!

Key Lime White Chocolate Cookies

1 box key lime cookies mix (or key lime cake mix)
½ cup butter, softened
4 oz. cream cheese, softened
1 egg
2 tablespoons lime juice
¾ cup white chocolate chips

Preheat oven to 350 degrees. In a medium size bowl, mix the cream cheese and butter until creamy. Add the egg, lime juice and cookie mix. Stir until all lumps are gone. Add the white chocolate chips. Form into small balls and place 2 inches apart onto an ungreased cookie sheet. Bake for 8-10 minutes or until the bottoms just start to turn a light brown. Do not over bake. Cool and enjoy.

Makes about 3 dozen.
